Planteray Rum 25 years 2000 Trinidad Itinéraires ABV 56.4% 700ml

This cuvee was selected from Trinidad Distillers Limited, the only remaining active distillery in Trinidad and Tobago, founded in 1824. Made from molasses fermented for two days, this column-distilled rum was first aged for sixteen years on site in a bourbon cask, then matured for an additional nine years in a cognac cask under continental ageing conditions. Rich in contrasts and subtle nuances, its aromatic profile shifts from lush fruit notes to hydrocarbon tones, even venturing into territories reminiscent of an Islay single malt.

Profile:

Refined and complex. Ripe fruits, hydrocarbons, acacia honey, coconut milk, gentian.

Nose: Refined and complex. Both exotic (pineapple, banana) and mineral (chalk), the aromatic palette gradually becomes more empyreumatic (hydrocarbons). Notes of essential oils (rosemary, thyme, thuja) emerge. These two opposing facets?fruity and organic?vie for prominence.

Palate: Lively and slender. Overflowing with ripe fruits (pear, pineapple, mango, kaffir lime), the flavour profile is wonderfully juicy. Warm asphalt and fuel undertones form a mineral backbone, upon which delicate white flowers (lily of the valley, lilac) gracefully settle. Gradually, acacia honey melts across the palate.

Finish: Velvety and distinguished. Kiwi adds brightness to the already exotic character of this vibrant profile. A refreshing sensation builds as it moves toward lactic (coconut, almond) and subtly saline notes. A graceful finale marked by touches of liquorice and earthy gentian root.
