Sullivan's Cove Second-fill American Oak Cask #TD0394 Tasmanian Single Malt Whisky is a highly collectible 12-year-old single-cask release distilled in 2013 and bottled in 2025 at 47.4% ABV. Yielding just 250 bottles globally, this specific expression showcases the unique characteristics of the Cambridge-based distillery's "Second-Fill" program. Rather than using standard ex-bourbon casks, these hand-selected, 200-liter American oak casks previously matured an older batch of Sullivans Cove single malt. By utilising a barrel that has already had its aggressive, first-fill char and heavy oak extraction mellowed out, the wood acts as a subtle canvas. This slower maturation allows the oily, fruit-forward, and robust signature DNA of the Tasmanian pot-still distillate to take centre stage, yielding a deeply textured, complex spirit defined by notes of creamy vanilla, soft malt, and vibrant fruits.
