Unusual Gin, with a strong identity. The boundaries between spirit categories overlap giving life to a unique product, with a strong appeal to both its history and our Tuscan terroir. The Old Tom is a style of Gin that became popular in England between the 18th and 19th centuries. It was characterized by a sweet taste, thanks to the addition of sugar. Adding sugar was an attempt to disguise a pungent taste caused by distillation probelms of that era. Before the invention of the column still, it was much more difficult to achieve a sufficiently high level of rectification of the base spirit. It was therefore necessary to correct unpleasant tastes by using additives to soften the flavor. Acknowledging this tradition, we have kept intact the suave and mellow style of the ancient Gins, but we purified it from the addition of any sweetener. We researched traditional Tuscan ingredients and found that the botanicals of our countryside are naturally sweet and could give a persuasive flavor to our Gin without the need of artificial ingredients. In the end, in order to emphasize the customs of the past, our Old Tom Gin is briefly rested in French oak barriques, where our wine has previously been elevated, for a silkier and rounder mouthfeel. The result is an unusual Gin, with a strong identity.
