We regret that a broken cork does not warrant a replacement bottle.
Out of this craving we have conceived Equilibrium: a theoretical balance of sherry and peat flavour profiles achieved via haphazard vatting and mixing of casks.
For this first release we sloshed together a first fill sherry butt of Edradour 2010 and a refill hogshead of Ballechin 2003 and then bottled the resulting goo at 52%.
Equilibrium is slightly experimental and absolutely NOT innovative. But, is it balanced? Is it harmonious? Have we achieved so called 'equilibrium'? Or is it just a huge steaming morass of marketing hyper-bollocks? Is it, in fact, any good at all? Only you can be the judge of this. We look forward to, and are genuinely interested in, your feedback.
Of course, that would mean you would have to buy one and then actually open it and ingest some of the fluid contained within. Now that's innovation baby!
Nose: Honey-glazed ham, Cadbury Fruit & Nut, charred oak staves, baked earth, and butterscotch sweeties.
Palate: Dense smoke with a vegetal edge to it, leading into raspberry jam and mocha. A hint of fruity red chilli flakes underneath.
Finish: Savoury oak, salted nuts, and the last hints of red fruit.
