Aging Edradour in a cask that had previously held one of the world's most distinctive rums was a true challenge. Andrew Symington succeeded brilliantly: his single malt, matured in a cask from Hampden? the Jamaican distillery renowned for its powerful high-ester rums? emerged enriched by this remarkable encounter. Showcasing the beauty of a spirit radiant in its youth, the tasting unfolds in two distinct yet wonderfully complex and seamless phases. First comes the aromatic sequence, during which the rum generously takes centre stage. Then follows the palate, where the malted barley gradually and irresistibly asserts itself.
